A professional-grade pan engineered for even heat distribution across every hob and inside ovens. The solid aluminium casting absorbs heat quickly and spreads it uniformly, eliminating hot spots that scorch food. A titanium layer bonded between the aluminium and the non-stick surface reduces friction, letting ingredients slide without tearing or sticking. This construction allows the pan to move seamlessly from induction, gas or electric hobs into ovens up to 250 °C, making it a single vessel for searing, sautéing, baking and finishing dishes.
The operator places the pan on the hob, sets the desired heat level and adds ingredients once the surface is hot. Food cooks evenly without constant stirring, and the non-heating stainless steel handle remains cool to the touch throughout service. After use, the pan transfers directly to the oven for dishes that require browning or a final bake, or it can be cleaned immediately while still warm.
The base is a single piece of cast aluminium 360 mm in diameter and 55 mm deep, giving a wide, shallow profile that maximises contact with the heat source. The interior is coated with Whitford Xylan, a high-temperature non-stick finish that resists abrasion and prevents food from burning on. The exterior is left uncoated aluminium, which develops a natural patina that protects against corrosion without requiring seasoning.
Controls are minimal: the hob's own temperature dial regulates the heat, while the pan's construction—aluminium core, titanium interface and Xylan coating—manages heat transfer and food release automatically. The 360 mm diameter provides ample surface area for batch cooking, while the 55 mm depth keeps the pan light enough to lift with one hand when the stainless steel handle is used.
The 360 mm footprint fits standard professional hobs and oven racks, and the low profile allows it to slide into cupboards or stack with other pans. The weight of the aluminium casting gives stability on the hob, preventing accidental tipping when ingredients are stirred or flipped.
Cleaning follows from the materials: the Xylan coating releases food residue with warm water and a soft sponge, avoiding the need for abrasive pads or harsh detergents. The uncoated aluminium exterior can be wiped with a damp cloth; if discolouration appears, a mild aluminium cleaner restores the finish. The stainless steel handle is cleaned with the same methods as other kitchen utensils, avoiding chlorine-based products that can corrode the metal.
