A truffle slicer creates paper-thin, even slices by drawing a sharp blade across the surface of the ingredient. The blade is held at a fixed angle, and the thickness is set by a screw that moves the blade closer to or farther from the guide. This method ensures every slice is identical, which is essential for presentation and even cooking or drying. The same principle applies to slicing vegetables, cheese and chocolate, where uniformity improves texture and appearance on the plate.
To use the slicer, place the ingredient against the guide and turn the adjustment screw until the desired thickness is shown. Hold the slicer steady on the worktop and draw the blade smoothly across the surface. The cut piece falls away cleanly, ready for the next pass. The screw is turned again only when a different thickness is needed.
The slicer is built from stainless steel, including the blade, which is hardened to 55 HRC for long-lasting sharpness. The blade length is 60 mm, giving enough width to slice larger truffles and vegetables without crushing them. The overall footprint is 220 mm long and 85 mm wide, small enough to store in a drawer or cupboard when not in use.
The adjustment screw sets the cutting thickness between 0.2 mm and 3 mm. A setting of 0.2 mm produces translucent slices suitable for garnishing and delicate dishes, while 3 mm gives a thicker cut that holds its shape in salads and gratins. The same screw controls the gap for grating, turning the slicer into a multi-purpose tool.
Cleaning is done by hand after each service. The stainless steel surface resists corrosion and can be washed with warm water and a mild detergent. The blade should be dried immediately to prevent water spots and stored in a dry place to maintain its edge.
