Firewood and gas pizza oven Vesuvio GR90
A wood-fired pizza oven creates a dome of radiant heat that cooks a pizza evenly from above while the refractory floor transfers intense heat directly to the base. The fire burns at the rear or side, drawing air through the oven to maintain a steady temperature without mechanical fans. This method produces the characteristic char and leopard-spotting on the crust that a gas or electric oven cannot replicate.
The operator lights a small fire with kindling and hardwood, allowing the oven to reach the required temperature. Once the dome and floor are uniformly hot, the fire is pushed to one side or allowed to burn down to embers. Pizzas are launched onto the floor with a peel, rotated periodically, and removed when the crust is crisp and the toppings melted. The residual heat continues to cook successive batches without reheating.
The Vesuvio GR90 is built from fire-resistant COTTO refractory elements: the floor is a single slab, and the arch is split into two pieces for easier assembly. A metal chimney collector directs smoke outside, and the iron door seals the chamber when not in use. The exterior is finished in stainless steel to protect the insulation and provide a worktop surface.
Controls are minimal: the operator adjusts the fire size and door position to regulate temperature. The oven's 250–450 °C range allows for both Neapolitan-style pizzas at high heat and slower-baked breads or roasted vegetables at lower temperatures.
The 500 kg weight indicates a solid refractory construction that retains heat for long service but requires a reinforced floor or dedicated plinth. The 1050 x 1184 mm footprint fits a standard worktop depth, leaving space for dough preparation alongside. The 550 mm height allows the operator to load pizzas comfortably without stooping.
Cleaning involves brushing out ash and food debris after each service. The refractory floor and arch should be inspected periodically for cracks, and the chimney collector cleared of soot to maintain proper airflow. The iron door and stainless-steel exterior can be wiped down with a damp cloth.
