A canteen line organises the flow of hot and cold food from kitchen to counter. It provides a continuous worktop where staff load, hold and serve dishes without moving between separate stations. The line's length and built-in equipment create a single point of service, reducing queues and keeping food at safe temperatures until plated.
The worktop supports trays, utensils and serving containers while the lower shelf stores backup supplies. A stainless steel tray rail along the front edge prevents spills and guides trays into position. Cold marmites chill prepared dishes without ice, using refrigerated pans that slide into the worktop. Water marmites maintain hot dishes in water baths, circulating warmth evenly around the containers. This method keeps sauces, soups and stews at serving temperature without drying or scorching.
Operators begin by loading the cold marmites with chilled dishes and the water marmites with hot containers. Trays are placed on the worktop, ready for plating. The lower shelf holds extra stock, reducing trips to the kitchen. Customers move along the line, selecting items from the woven display cutout that frames the counter. The tray rail guides each tray forward, keeping the service orderly.
The structure is built from stainless steel, chosen for hygiene and resistance to corrosion in a busy kitchen. The front panel and tray rail are seamless, making them easy to wipe down after service. A single lower shelf sits beneath the worktop, providing additional storage without cluttering the counter.
Controls are integrated into the cold and water marmites, allowing staff to set and monitor temperatures for each pan. The size of the line—over five and a half metres long—creates a spacious serving area, while the depth and height ensure comfortable access for both staff and customers. The footprint dictates the space the unit occupies on the floor, requiring a dedicated area in the serving zone.
Cleaning involves wiping the stainless steel surfaces with sanitising solution after each service. The tray rail and front panel are designed without crevices, preventing food debris from collecting. The lower shelf is removable for thorough cleaning, and the marmites are drained and scrubbed according to their individual instructions.
The line includes two cold marmites for 1/1 GN containers, two water marmites for 1/1 GN containers, and one larger water marmite for 5 GN 1/1 containers. The woven display cutout provides a customisable frame for menu boards or decorative elements.
