GN1/3 catering containers standardise food storage across professional kitchens, allowing trays to slide into compatible racks, bain-maries, trolleys and refrigerated counters without repacking. The 1/3 Gastronorm size divides a full-size tray into three equal sections, so kitchens can organise multiple ingredients or portions on a single shelf or worktop. These containers hold food during preparation, cooking, chilling, transport and service, replacing loose bowls and reducing spills and cross-contamination.
A GN1/3 container is a rectangular stainless steel tray with rolled edges and reinforced corners. The rolled rim strengthens the structure and provides a lip that hooks onto rack runners or slots into combi-oven guides. The 100 mm depth gives enough volume for sauces, stews, vegetables or pre-portioned mains without overloading the tray or blocking air flow in convection equipment. The flat base and straight sides make it easy to scrape out contents and to stack multiple trays when empty.
To use the container, the operator fills it to a safe level below the rim, slides it into the appropriate slot or rack, and secures it with the retaining clips or bars fitted to the equipment. In a bain-marie, the tray sits in hot water to keep food warm; in a blast chiller, cold air circulates around the tray to pull heat out quickly; in a combi-oven, hot air moves across the tray to cook evenly. After service, the tray is removed, emptied, and washed in a commercial dishwasher or by hand.
The container is made of stainless steel, which resists corrosion, does not absorb odours, and withstands repeated washing at high temperatures. The 3.6 L volume allows bulk quantities of ingredients to be stored or cooked in a single tray, reducing the number of transfers and the space taken on worktops or in storage cupboards.
Cleaning follows from the construction: the smooth stainless steel surface and rolled edges allow food residue to be wiped or scraped off before the tray is run through a commercial dishwasher. The absence of seams or crevices prevents trapped food and simplifies sanitising. Stacking the trays when dry keeps them organised and ready for the next service.
