A drying cabinet for meat maturation creates the controlled environment that turns primal cuts into dry-aged beef, cured hams or charcuterie without chemical additives. The cabinet circulates filtered, humidified air at low temperature, removing surface moisture while the muscle enzymes slowly break down fibres. This process concentrates flavour, tenderises the meat and develops the characteristic crust that seals the outside. Because the air is kept moving evenly, every piece matures at the same rate, and the cabinet's sensors adjust humidity and temperature continuously to prevent spoilage or excessive weight loss. The operator loads the cabinet by placing the meat on the adjustable stainless-steel shelves. The glass door is then closed and the desired programme selected from the touch-screen display. Six pre-set recipes cover slow, traditional and accelerated maturation; each recipe can be customised in eight steps, setting temperature, humidity and ventilation for every phase. Once the programme starts, the patented OxigenKlima system filters the air to reduce bacteria and mould, while the indirect ventilated cooling system circulates air horizontally and vertically to maintain uniform conditions throughout the chamber. The internal LED lighting allows the operator to monitor the natural colour change of the meat without opening the door, and the built-in probe tracks humidity and temperature in real time. When the cycle completes, the cabinet signals the operator, who removes the matured product ready for portioning or further processing.
