A drying cabinet for meat maturation creates a controlled environment where air circulates evenly around each cut, removing surface moisture while preserving the muscle tissue beneath. The process relies on steady low temperatures and regulated humidity to prevent spoilage and encourage natural enzymatic breakdown, which tenderises the meat and develops flavour over days or weeks. Unlike a standard refrigerator, the cabinet maintains precise airflow patterns so that every piece receives the same treatment, avoiding hot spots or stagnant zones that could lead to uneven drying or bacterial growth.
To begin a cycle, the operator loads the adjustable shelves with meat, closes the glass door and selects one of six pre-set recipes or creates a custom programme. Each recipe can include up to eight steps, each specifying temperature, humidity and ventilation intensity. The touch-screen display shows real-time readings from the internal probe, allowing the operator to monitor colour change and adjust settings without opening the door. Horizontal and vertical airflow, driven by a patented indirect ventilated cooling system, ensures even moisture distribution throughout the chamber, reducing weight loss to around 3–4% while preventing dehydration.
The cabinet is constructed from AISI 304 stainless steel and insulated with cyclopentane for thermal efficiency. A monoblock chiller simplifies maintenance, and the R290 coolant meets modern environmental standards. Climate class 5 certification allows the unit to operate in ambient temperatures from +18 to +43 °C, making it suitable for tropical conditions. Internal LED lighting illuminates the chamber, and the OxigenKlima system reduces bacteria and mould while minimising odours during the maturation process.
Controls include a capacitive touch screen with intuitive icons for setting temperature between 0 and +4 °C, humidity levels, and ventilation speed. The test-centre function verifies sensor accuracy before each cycle, and the built-in probe continuously measures internal conditions. Adjustable shelves accommodate loads from 50 kg to 130 kg, and the 740 mm width, 850 mm depth and 2115 mm height determine the footprint on the kitchen floor. The 162 kg weight requires a stable surface and may need two people to move the unit into position.
Cleaning involves wiping the stainless-steel interior with food-safe sanitiser, removing and washing the shelves, and periodically checking the monoblock chiller for dust accumulation. The patented airflow system has no filters to replace, reducing upkeep time.
