A loose-leaf green tea blend that layers eight distinct Sencha-style varieties—Gunpowder, Mini Tuo, Chun Mee, Pai Mu Tan, Lung Ching, Snow Bud and Pi Lo Chun—with candied pineapple bits, dried strawberry pieces and sunflower blossoms. The combination creates a cup that balances vegetal depth with bright, fruity accents and a gentle floral lift.
Green tea leaves release their flavour when steeped in water just below boiling. The leaves unfurl, releasing catechins, amino acids and aromatic oils that give the liquor its colour, body and taste. Lowering the temperature to 90 °C prevents bitterness by slowing the extraction of tannins while still drawing out the sweeter, more delicate compounds from the fruit and flower inclusions. A two-minute infusion is enough to develop the full spectrum of flavours without over-steeping.
To prepare, measure one teaspoon of the blend per cup into a warmed teapot or infuser. Heat fresh water to 90 °C—either by bringing it to a boil and letting it cool for a minute or by using a kettle with adjustable temperature settings. Pour the water over the leaves and let them steep for two minutes. Strain and serve. The leaves can be re-infused once or twice, with each subsequent steeping revealing different layers of the blend.
