Chun Mee green tea is a whole-leaf Chinese tea known for its smooth, aromatic character and subtle smoky notes. Unlike finely broken teas, the leaves unfurl gradually in hot water, releasing flavour in stages rather than all at once. This method gives a gentler, more nuanced infusion that can be re-steeped several times without becoming bitter.
The process begins with fresh tea leaves that are withered, rolled and lightly oxidised before being dried. The rolling step shapes the leaves into the characteristic comma-like curls that give Chun Mee its name. Once dried, the leaves are sorted and packed whole, preserving the essential oils that carry the aroma and taste.
To brew, measure one teaspoon of leaves per cup into a warmed teapot or infuser. Heat fresh water to 70 °C—just below a rolling boil—to avoid scalding the delicate leaves. Pour the water over the leaves and steep for two minutes. The leaves will sink and the liquor will take on a pale golden hue. Strain and serve immediately; the same leaves can be re-used for a second or third infusion by extending the steeping time by thirty seconds each time.
