Pu Erh tea is a fermented Chinese tea that develops its deep, earthy flavour and reddish infusion through a prolonged maturation process. Unlike green or black teas, which oxidise quickly, Pu Erh undergoes microbial fermentation, often for years, before it is ready to brew. This method concentrates its natural compounds, producing a full-bodied cup with a smooth, lingering finish. The leaves are harvested, withered, pan-fired, rolled, and then left to ferment in controlled conditions, which enhances their complexity and reduces bitterness without the need for additives or artificial processing.
To prepare this organic Pu Erh, measure one teaspoon of loose leaves per cup into a pre-warmed teapot or infuser. Heat fresh water to boiling point, 100 °C, and pour it over the leaves. Allow the tea to steep for three minutes, during which the leaves unfurl and release their rich colour and aroma. The infusion deepens in hue and flavour with each passing minute, so timing is key to balancing strength and smoothness. Once brewed, strain the leaves and serve.
