A fryer basket holds food submerged in hot oil while it cooks, allowing even frying without the food sticking to the vat or floating to the surface. The basket's perforated base and sides let oil circulate freely, so heat reaches every piece at once. When the timer signals, the operator lifts the basket clear of the oil, letting excess drain back into the fryer before the food is served or transferred to a holding station.
To use the basket, the operator loads raw or pre-prepared food into it, ensuring no pieces overlap more than necessary. The basket is then lowered into the pre-heated oil vat of the CP-76 fryer. Once the cooking cycle finishes, the basket is raised, shaken gently to release any trapped oil, and set on a draining rack or tray. The basket's open construction means food does not steam or stick, so each batch emerges crisp and evenly coloured.
The basket is made of stainless steel, chosen for its resistance to corrosion from hot oil and cleaning chemicals. The dimensions of 115 mm depth, 290 mm width and 200 mm height match the CP-76 fryer's vat, so the basket sits level and does not tilt or jam when lowered. These measurements also determine how much food can be loaded at once, keeping portion sizes consistent and preventing overcrowding that would lower the oil temperature.
This is a 1/4 size basket, meaning it occupies one quarter of the fryer's total vat area. It is designed to fit LOTUS CP-76 fryers only and is not compatible with other models or brands.
