An electric hob transfers heat directly from cast-iron hotplates to pans through conduction. Each plate is a thick disc of cast iron that heats evenly when current passes through its embedded element. The hob's four independent plates allow different cooking temperatures at the same time, so one burner can simmer a sauce while another sears meat or boils water. A temperature limiter on each plate prevents overheating, and the steel sealing ring around each hotplate keeps spills from reaching the element below.
To use the hob, the operator places a pan on the chosen plate, turns the IPX5-rated control knob to one of seven power settings, and waits for the plate to reach the desired temperature. The selector switch lets the user choose which plate to activate, and the residual heat indicator on the glass-ceramic models shows when a plate is still hot after being switched off. Adjustable feet level the unit on uneven floors, and the locking system secures the hob in place during movement. Tray runners with locking stops hold pans steady, reducing the risk of spills.
The hob is built from 18/10 CrNi stainless steel (AISI 304), a marine-grade alloy that resists corrosion in damp environments. The 1 mm thick worktop has rounded edges for safety and a Scotch-Brite satin finish that hides scratches. Chrome-plated components and a splash guard protect the controls and surrounding surfaces from grease and water. The control knobs are water-resistant to IPX5, allowing them to withstand low-pressure jets from any direction without damage.
Each of the four plates draws 2.6 kW, giving a total power of 10.4 kW. This requires a 400/440 V 3-phase electrical supply, the standard for professional catering equipment in large kitchens. The 800 mm width fits standard worktop depths, while the 705 mm depth leaves room for pan handles without overhang. At 63 kg, the hob is heavy enough to stay stable during use but can still be moved by two people when necessary.
Cleaning involves wiping the stainless steel surfaces with a damp cloth and mild detergent, avoiding abrasive pads that could damage the satin finish. The cast-iron plates should be cleaned when cool, using a scraper to remove burnt-on food. The splash guard and chrome-plated parts can be removed for thorough cleaning, and the adjustable feet should be checked periodically to ensure the hob remains level.
