A commercial electric hob transfers heat through cast-iron plates that conduct energy evenly into pots and pans. The plates are heated by electric elements beneath the surface, eliminating open flames and allowing precise control over cooking temperatures. This method ensures consistent results across the entire cooking area, making it suitable for high-volume kitchens where timing and uniformity matter.
To operate the hob, the user first ensures the unit is connected to a 400 V 3-phase electrical supply. Each of the six square plates is controlled independently by a 7-position power regulator, allowing the chef to set the exact heat level required for different dishes. Pots and pans are placed directly onto the plates, where cast-iron's thermal mass retains and distributes heat steadily. The included pot fixators prevent cookware from sliding, improving safety during busy service. Once cooking is complete, the plates cool gradually, and residual heat can be used for finishing dishes without additional energy.
The hob's construction is built for professional use. The worktop is made from 2 mm thick 18/10 AISI 304 stainless steel, chosen for its resistance to corrosion and ease of cleaning. The surface has a Scotch-Brite satin finish, which reduces visible scratches and fingerprints, while rounded edges and chrome details enhance durability. A rear protective panel shields controls from splashes, and the IPX5-rated waterproof knobs allow safe wiping down during service. Adjustable legs ensure the hob can be levelled on uneven floors, providing stability for heavy cookware.
