A ceramic hob heats by radiant elements sealed beneath a smooth glass-ceramic surface. The elements glow when powered, transferring heat directly to pots and pans without open flames or exposed coils. This method spreads heat evenly across the cooking zone, eliminating hot spots and allowing precise temperature control for tasks from simmering to searing. The surface remains cool to the touch outside the active zones, reducing accidental burns and simplifying cleaning.
To operate the range, the chef first ensures the unit is levelled on its adjustable legs. The main isolator is switched on at the wall, then the range's power switch is engaged. Each zone is selected by its control knob, which sets the radiant element to the desired intensity. Once the element reaches temperature, the residual-heat indicator lights, showing the zone is ready for use. Pots and pans are placed directly on the ceramic surface; the heat conducts through the glass to the base, cooking the contents evenly. After use, the controls are turned off, but the residual-heat indicators remain lit until the surface cools sufficiently for safe cleaning.
The 13.6 kW power rating requires a three-phase 400 V supply, the standard circuit for heavy-duty catering equipment. This load supports simultaneous operation of multiple zones at high output, essential for service peaks in professional kitchens. The 800 mm width fits standard worktop runs, while the 900 mm depth and height integrate with wall-mounted extraction canopies. At 74 kg, the unit is moved by two staff using a sack truck, and the adjustable legs allow fine levelling on uneven floors.
Construction is 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish, chosen for corrosion resistance and ease of sanitisation. The 2 mm thick worktop has rounded edges and chromed details for durability and safety. IPX5-rated waterproof control knobs withstand splashes and hose-down cleaning. The front control panel lifts away for access to internal components, simplifying maintenance. The neutral cabinet below is open, providing storage without doors that could trap dirt or impede airflow.
Cleaning involves wiping the ceramic surface with a damp cloth once cooled, removing spills before they carbonise. The stainless steel body is cleaned with a mild detergent and non-abrasive pad, avoiding harsh chemicals that could damage the satin finish. The control panel is removed periodically to clear grease and dust from behind the knobs, ensuring smooth operation and preventing electrical faults.
