A bain marie keeps prepared dishes at serving temperature without drying or overcooking. The appliance holds a water bath beneath a perforated false bottom; the water is heated by an electric element, and the steam rises through the perforations to warm the gastronorm containers evenly. This indirect heat prevents hot spots and keeps sauces, soups and delicate proteins at a constant, gentle warmth for hours.
The operator fills the deep stainless-steel vat with water to the marked level, then places the GN2/1 container on the false bottom. The thermostat is set to the required holding temperature and the unit switched on. Once the water reaches the set point, the element cycles on and off to maintain the temperature. The front drain tap allows quick water changes between services, and the adjustable legs level the unit on uneven floors.
The construction is 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. The work surface is 1 mm thick, with rounded edges and chrome-plated details for durability and ease of cleaning. IPX5-rated waterproof handles protect the controls from splashes. A built-in fixing system secures the gastronorm container in place.
The 4.2 kW power rating draws a steady load suitable for a dedicated circuit in a professional kitchen. The 400 V~2N/230 V~3/230 V~ connection accepts either three-phase or single-phase supplies, allowing installation in most commercial premises. The 800 mm width fits standard worktop depths, while the 54 kg weight requires two people to move safely.
Cleaning is straightforward: the deep vat drains completely through the front tap, and the smooth stainless surfaces wipe down with a damp cloth. The thermostat and controls are sealed behind the splash-proof panel, reducing maintenance to occasional descaling of the element.
