Professional electric bain-marie with a deep tank, thermostat control, and a durable AISI 304 stainless steel construction, designed to keep food at serving temperature.
GN2/1, H-150 mm
A bain marie keeps prepared food at serving temperature without drying or overcooking. It circulates warm water around a deep, insulated vat, transferring gentle heat to the gastronorm pans placed inside. The water bath evens out temperature and buffers sudden changes, so sauces stay smooth, vegetables retain moisture and proteins do not toughen. A thermostat cycles the heating element to hold the set point, while the large surface area of the water spreads the warmth evenly across every pan, regardless of position.
To use the unit, fill the vat with water to the marked level, plug the appliance into a 400 V 3-phase supply and switch on. Set the thermostat to the desired holding temperature; the indicator light shows when the element is active. Slide GN2/1 pans into the water-filled well, ensuring they rest on the support rails. The rounded edges of the well and the satin-finish stainless steel make loading and unloading smooth. Adjustable legs level the unit on uneven floors, and a front drain tap empties the vat without tilting.
The construction is 18/10 AISI 304 stainless steel throughout, with a 1 mm thick worktop that resists dents and scratches. Edges are rolled for safety and durability, and chrome-plated details add corrosion resistance. IPX5-rated waterproof handles allow thorough cleaning without risk to the electrical components. A locking system secures the pans in place during service.
The 4.2 kW power rating requires a dedicated 3-phase circuit capable of supplying the load continuously. The 800 mm width accommodates a single GN2/1 pan, while the 705 mm depth leaves clearance for rear plumbing and electrical connections. At 54 kg, the unit is moved with a trolley or two-person lift; the adjustable legs then stabilise it on the worktop. The 400/440 V voltage matches European commercial supplies, and the 50/60 Hz frequency ensures compatibility with standardised kitchen wiring.
Cleaning is straightforward: drain the vat, wipe the interior with a damp cloth and mild detergent, then rinse. The Scotch-Brite satin finish hides minor scratches and reduces glare under kitchen lighting. Regular descaling of the heating element maintains efficiency, and the waterproof construction allows hose-down without disassembly.
The model BMT-78EMX is the single-phase variant of the BMT-78ETX series, designed for kitchens with 3-phase power but without neutral. The catalogue places it in the professional bain marie section, alongside larger and smaller capacities for gastronorm pan holding.
