A boiling unit heats water or stock directly on its cast-iron plates, transferring heat through conduction rather than air. The plates reach working temperature quickly and hold it evenly, so pots boil steadily without hot spots. Radiant elements beneath the ceramic glass surface provide the heat, while a temperature limiter prevents overheating and a seven-position switch lets the operator set the exact level needed for simmering, boiling or rapid reduction.
To use the unit, position it on a worktop or rolling rack and secure it with the integrated fixing system. Plug the three-phase 400 V supply into a dedicated circuit. Place a pot on one of the two square hot plates, turn the switch to the desired setting and wait for the plate to reach temperature. A warning light indicates residual heat after the plate is switched off, so staff know when it is safe to touch. The steel border seals keep spills from reaching the interior, and the rolling racks lock the unit in place during service.
The unit is built from 2 mm thick CrNi 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. Chromed details protect corners and edges, and the worktop resists scratches and corrosion. Cast-iron hot plates sit beneath a ceramic glass surface, combining rapid heat-up with easy cleaning.
