Rolling rack
A boiling hob concentrates radiant heat beneath ceramic glass to bring pots to a rolling boil quickly and evenly. The radiant elements heat the glass, which then transfers the heat directly to the base of the pot, minimising wasted energy and giving precise control over the cooking temperature. Warning lights show residual heat after the plates are switched off, so the operator knows when the surface is still hot enough to cause burns or continue cooking.
The sequence begins by placing the pot on one of the four square cast-iron hot plates. Each plate has a seven-position switch that sets the heat level from low simmer to full boil. A temperature limiter prevents the element from overheating, protecting both the hob and the cookware. Once the pot is in place, the operator selects the desired heat setting and leaves the hob to reach temperature. The chromed steel border around each plate keeps spills from running onto the worktop, and the ceramic glass surface is easy to wipe clean after use. When the cooking is finished, the residual-heat lights remain on until the surface is safe to touch.
The unit is built from CrNi 18/10 AISI 304 stainless steel with a Scotch-Brite satin polish finish. The worktop is 2 mm thick, providing a sturdy surface for heavy pots. Chromed details add corrosion resistance and a professional appearance. The hob is fixed in place with a built-in mounting system, and rolling racks can be attached to block the pots from sliding during vigorous boiling.
The 10.4 kW power rating means the hob requires a three-phase 400 V supply, which is standard in professional kitchens for high-demand appliances. The 800 mm width and 600 mm depth fit a standard worktop module, leaving space for adjacent equipment. At 38 kg, the unit is light enough to be moved by two people but heavy enough to stay stable under large pots.
Cleaning involves wiping the ceramic glass surface after each use to remove spills and splashes. The chromed borders and stainless steel worktop can be cleaned with a damp cloth and mild detergent. The cast-iron plates should be kept dry to prevent rust, and the temperature limiter should be checked periodically to ensure it is functioning correctly.
