A braising pan heats a large, shallow vat of liquid or sauce indirectly through a surrounding water jacket, keeping the cooking temperature steady and even across the entire base. To begin, the operator fills the 120 litre vat with ingredients and liquid, then sets the thermostatic control to the desired temperature. The pan heats the water jacket, which in turn warms the vat evenly.
