Professional electric bain-marie for fried products with a GN 2/3 tank and perforated double bottom, designed to maintain product crispness and optimal serving temperature.
A fry dump maintains the serving temperature of fried foods without steaming them soggy. An infrared heater beneath the tank radiates heat upwards, warming the perforated double bottom that holds the food. Because the heat is dry and even, the coating stays crisp while the interior stays hot, ready for plating or holding in a service counter.
The operator loads a GN 2/3 gastronorm bowl of freshly fried products into the tank. The perforated double bottom allows excess oil to drain through, collecting below and keeping the food clear of standing oil.
