A bratt pan combines the functions of a braising pan, fryer, griddle and stockpot in one large, tilting vessel. The electric model heats the cooking surface with armoured stainless steel elements embedded beneath the pan. These elements raise the temperature evenly across the base, allowing consistent cooking whether searing, shallow-frying or simmering large batches. A thermostat regulates the heat, cycling the elements to hold the set temperature without scorching or cold spots.
The operator loads the pan with ingredients, closes the counter-balanced hinged cover to retain heat and steam, then sets the thermostat. Once the desired temperature is reached, the elements maintain it automatically. The motorised tilt mechanism lifts the entire pan, pouring contents through the front lip into gastronorm trays or serving dishes without manual lifting. A tap on the flue riser supplies water directly into the pan for deglazing or cleaning.
The pan and cover are constructed from AISI 304 stainless steel, chosen for its resistance to corrosion and ease of cleaning. The manual tilting mechanism includes a cylindrical spiral spring to assist the movement; this model adds a motor for powered tilt.
