A drop-in electric oven designed to integrate flush with professional worktops, the LOTUS 90 MARINE FSD-98ETX replaces counter space with a static heating chamber that surrounds gastronorm trays in steady, even heat. Unlike fan-assisted models, static ovens rely on natural convection: heating elements at the top and bottom of the cavity warm the air, which rises and falls in gentle currents to transfer heat to the food. This method avoids the drying effect of forced air, making it particularly suited to delicate items like pastries, slow-roasted meats and custards that benefit from consistent, ambient warmth without turbulence.
The sequence begins by sliding the oven's wide door open and placing a GN2/1 gastronorm tray onto the supplied wire grid. The grid's 650 × 710 mm dimensions match the standard tray size, ensuring full support and easy transfer in and out. Once loaded, the door is closed and the temperature dial set anywhere between 50 °C and 300 °C. The static elements cycle on and off to maintain the chosen level, while the operator monitors progress through the clear front panel. After the cooking cycle, the tray is lifted out and the oven left to cool before cleaning.
Construction is entirely in 18/10 CrNi AISI 304 stainless steel, a grade chosen for its resistance to corrosion and staining in high-moisture environments. The exterior trim is chromed for durability and a polished finish. The drop-in flange sits flush with the worktop, creating a seamless surface that simplifies wipe-downs and prevents debris from collecting in gaps.
Controls consist of a single rotary knob that sets the cavity temperature within the 50-300 °C range. The absence of timers or programmes keeps the interface straightforward, allowing rapid adjustments during service.
The 6.7 kW power rating indicates a three-phase load designed for commercial circuits, while the 45 kg weight reflects the solid stainless steel build and requires secure mounting to the surrounding cabinetry. The 800 mm width, 855 mm depth and 48.6 mm height define the cut-out needed in the worktop, leaving the oven's 670 × 730 × 340 mm cooking cavity free for GN2/1 trays.
Cleaning follows from the materials and construction: the stainless steel interior and wire grid can be wiped with a damp cloth and mild detergent after each use, while the chromed exterior trim is polished with a soft cloth to maintain its finish. The static heating elements are accessed by removing the grid, allowing residue to be brushed away without damaging the surface.
The oven is supplied with one wire grid sized for GN2/1 trays; additional grids or shelves are available as separate accessories.
