A fry-top griddle heats a solid metal plate from beneath, transferring energy directly into the food without oil. The plate's even surface spreads the heat across every contact point, searing meats, toasting bread and cooking delicate items such as eggs or pancakes without the risk of flare-ups or uneven browning. Because the heat is radiant and conductive rather than convective, the kitchen stays cooler and the air cleaner than with open-flame or oil-based methods.
The operator sets the desired temperature on the front-mounted control, then loads the food straight onto the plate once it reaches the target. A smooth plate gives a uniform finish; a ribbed plate leaves char lines for a grilled appearance. The double thermostat maintains the set point and cuts power if the plate overheats, preventing scorching and extending the life of the element. When the food is done, it is lifted off with a spatula and the plate is ready for the next batch.
Built from CrNi 18/10 AISI 304 stainless steel, the unit has a 1.5 mm thick worktop that resists warping and corrosion. The satin Scotch-Brite finish reduces glare and hides minor scratches, while chromed details protect high-wear edges. The plate itself is available in two materials: FE430B carbon steel for standard use or FE510C chrome steel for higher durability and easier cleaning. A fixing system secures the unit to the worktop or counter, preventing movement during service.
The 9 kW power rating means the fry-top draws a substantial load, requiring a dedicated 400 V three-phase circuit. The 800 × 600 mm footprint fits standard worktop depths and allows side-by-side installation with other modular equipment. At 60 kg, the unit is heavy enough to stay stable during use but can still be moved by two people with care. The temperature range of 50 to 300 °C covers everything from gentle warming to high-heat searing.
After service, the plate is scraped clean while still warm, then wiped with a damp cloth. Stubborn residues are loosened with a mild abrasive pad, taking care not to scratch the satin finish. The chromed edges and control panel are wiped with a soft cloth to prevent tarnishing. The double thermostat should be checked periodically to ensure both the operating and safety circuits are functioning.
Variants include a smooth plate, a ribbed plate or a 50/50 split between the two. Each version is available with either a standard carbon-steel plate or a chrome-steel plate for greater durability.
