A smooth electric fry top heats a solid metal plate from beneath, transferring energy directly to the food without air gaps. The plate's even conductivity spreads heat across its surface, eliminating hot spots so every portion cooks at the same rate. This method suits searing, grilling and shallow frying where contact with the metal is essential; it also keeps the kitchen cooler than open-flame alternatives because the heat is concentrated on the plate rather than radiating into the room.
To start, the operator positions the unit on a stable worktop, adjusts the legs for level and locks them in place. The power is connected to a 400 V three-phase supply, then the thermostat is set between 50 °C and 300 °C. Once the plate reaches temperature, food is placed directly on the smooth surface. A removable grease tray beneath the front edge collects drippings during cooking. After service, the tray is lifted out, emptied and wiped clean. The control knobs, rated IPX5 for water resistance, remain cool to the touch and allow precise temperature adjustment throughout the day.
The griddle plate is 2.5 mm thick 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. This alloy resists corrosion and warping under repeated heating cycles, while the satin surface reduces sticking without requiring excessive oil. A secondary safety thermostat cuts power if the primary sensor fails, preventing overheating. The entire unit measures 1200 mm wide, 705 mm deep and 280 mm high, fitting standard worktop depths and leaving space for adjacent appliances. At 114 kg, the fry top is moved with a trolley or two-person lift and secured in place with the built-in locking system.

The temperature range from 50 °C to 300 °C covers low-temperature holding, gentle simmering and high-heat searing.
