Professional electric griddle with a half-ribbed, half-smooth cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heat distribution, a long service life, and easy daily maintenance.
A fry-top heats a solid metal plate electrically, transferring heat directly to pots, pans or griddles without flames or hot gases. The plate's mass holds the temperature steady, so food sears evenly across the surface and recovers quickly when new items are added. Two independent cooking areas let the operator set different temperatures for delicate fish on one side and crisp bacon on the other, or keep one side hot while the other cools for holding sauces or warming plates. The ribbed section of the plate creates char lines on meats and vegetables, adding visual appeal and extra texture without extra fat.
To start, the operator plugs the unit into a 400 V three-phase supply and switches on. The control knobs for each zone are set to the desired temperature between 50 °C and 300 °C; the working thermostat maintains the setting while a separate safety thermostat cuts power if the plate overheats. Once the plate reaches temperature, a light or click signals readiness. Pots, pans or griddles are placed directly on the plate; the ribbed half gives sear marks, the smooth half gives even contact for eggs, pancakes or crepes. After cooking, the operator turns the knobs to zero, unplugs the unit and allows the plate to cool.
The cooking surface is 2 mm thick 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish, rounded edges and chrome-plated trim. A removable grease drawer beneath the plate collects drippings, and the rear splash guard protects the wall. The open cabinet below provides storage for kitchen tools, trays or ingredients within arm's reach. Adjustable feet with locking castors allow the unit to be levelled on uneven floors and moved for cleaning or service.
The 15 kW power rating requires a dedicated three-phase circuit capable of handling the load without tripping breakers during peak demand. The 800 × 900 × 900 mm footprint fits standard worktop runs, leaving space for adjacent hobs or ovens. The 126 kg weight means the unit is floor-standing and requires two people to lift or move safely.
Cleaning starts with the removable grease drawer, which is emptied and wiped daily. The control panel front is unclipped to access the internal components; the plate itself is scrubbed with a non-abrasive pad and degreaser, avoiding harsh chemicals that could damage the satin finish. The open cabinet is wiped down weekly to remove dust and spills.
The FTLR-98ETX is supplied with one end panel (TPA-9) for finishing the run when the fry-top is installed at the end of a counter.
