A commercial fryer heats a measured volume of oil to a consistent temperature, then submerges food in wire baskets for rapid, even cooking. The oil transfers heat far faster than air, sealing the surface while the interior cooks through. A thermostat cycles the heating elements to hold the set point, and a second, independent thermostat cuts power if the first fails, preventing oil from reaching its flash point. Overheat protection adds a further layer: if the oil temperature climbs beyond safe limits, the unit shuts down automatically. This method gives the high throughput and repeatable results professional kitchens require, whether for chips, battered fish, doughnuts or small poultry joints.
The operator fills each 13 L vat to the marked level with fresh oil, then closes the lid to reduce heat loss and splashing. The power switch is turned on, and the thermostat set to the required temperature. Once the oil reaches the set point, the ready indicator lights. The baskets, each sized to hold a standard catering portion, are loaded with food and lowered into the oil. A timer is started; when it expires the baskets are lifted, drained over the vat and emptied onto a tray. A tap at the base of each vat allows oil to be drained for filtering or replacement without lifting the unit.
