A professional electric fryer with twin 18 litre vats and an integrated neutral cabinet, designed for continuous frying in commercial kitchens. The appliance heats oil in two separate vats using submerged electric elements. A thermostat in each vat maintains the set temperature, while a second safety thermostat cuts power if the oil overheats. Hot oil transfers heat rapidly to food in the baskets, producing a crisp exterior and even cooking throughout. The neutral cabinet below provides dry, ambient storage for ingredients or finished items, keeping them within reach during service.

To operate, fill each vat with oil to the marked level and switch on the power. Set the desired temperature on the control panel for each vat independently. Once the oil reaches temperature, lower the baskets loaded with food into the vats. A visual and audible alarm sounds if the safety thermostat trips. After frying, lift the baskets, allow excess oil to drain, and transfer the food to the neutral cabinet or serving area. Two drip trays with strainers beneath the vats collect oil and food debris, simplifying cleanup.

The fryer is constructed from 2 mm thick AISI 304 stainless steel with a Scotch-Brite satin finish, rounded edges and chrome-plated details. The rear panel is removable for access to internal components. Water-resistant IPX5-rated control handles protect the electronics from splashes. Rotating heating elements allow the vats to be lifted out for thorough cleaning. Adjustable feet ensure the unit sits level on uneven floors. The package includes two baskets, lids, a vat filter and a drip tray for emptying oil.

A power rating of 31.8 kW requires a three-phase 400/440 V supply, typical for high-demand kitchen equipment. The 800 x 900 x 900 mm footprint fits into standard worktop layouts, while the 106 kg weight indicates a freestanding unit that can be moved with a trolley. The 30 kg/h capacity allows continuous frying for medium to high-volume service. Each vat measures 31 x 34 x 33 cm internally, accommodating baskets 28 x 29 x 15 cm deep.

Cleaning involves draining the oil, removing the vats and rotating the heating elements to access all surfaces. The front control panel detaches for access to internal parts. Drip trays and strainers are removable for washing. The neutral cabinet can be wiped down with a damp cloth.

This model is the twin-vat version of the LOTUS F2/18-98ETX fryer range, which also includes single-vat variants.
