An electric fryer heats a measured volume of oil to a set temperature, transferring heat rapidly and evenly to food lowered in a basket. The oil acts as a medium, conducting heat more efficiently than air, which allows quick cooking with a crisp exterior and even doneness. The fryer's heating elements are submerged or positioned beneath the oil vat, cycling on and off to maintain the chosen temperature. The operator loads the two baskets with food, sets the desired temperature on the 4.3-inch touch screen, and selects a cooking programme or timer.
