An electric fryer designed for continuous frying in professional kitchens, this LOTUS unit heats two separate vats of oil to cook food evenly and quickly. A heating element beneath each vat raises the oil temperature, while the baskets lower into the hot oil to submerge the food. The dual-basket configuration allows different foods to be fried simultaneously without flavour transfer, and the neutral cabinet provides additional storage or workspace alongside the fryer.

The operator loads each basket with the food to be fried, then lowers it into the preheated oil. A thermostat maintains the set temperature, ensuring consistent results, while a second safety thermostat prevents overheating. Visual and audible alerts signal when the fryer is ready or if the safety thermostat has activated. After frying, the baskets are lifted out, allowing excess oil to drain back into the vat. The fryer includes drip trays with strainers to collect oil and food debris, simplifying cleanup.

Constructed from 18/10 CrNi stainless steel with a Scotch-Brite satin finish, the fryer features a 2 mm thick worktop with rounded edges, chrome-plated details, and a rear protective panel. The control handles are water-resistant to IPX5 standard, protecting against low-pressure water jets. Adjustable feet ensure stability on uneven floors, and the front control panel can be removed for easy access to internal components.

The fryer operates on a 400 V three-phase supply with a neutral connection or a 230 V three-phase supply, accommodating standard commercial electrical setups.
