An electric hob built for continuous service in professional kitchens, where cast-iron plates transfer heat directly to pans without the delay of ceramic or induction. Each plate is a solid disc of iron, heated by an embedded element and ringed with a steel flange that seals the edges against spills. The hob's surface is a single sheet of 1 mm 18/10 stainless steel, satin-finished to hide scratches and rounded at the edges so cloths slide without snagging. A raised splash guard runs along the rear, protecting the wall and backsplash from grease and water thrown up by boiling or frying.
Heat is controlled individually for each plate by a seven-step rotary switch that sets the element's output from low simmer to full boil. A built-in thermal limiter cuts power if the plate overheats, preventing warping or damage to the iron. The hob does not use residual-heat indicators; instead, the cast iron retains warmth long after the switch is turned off, so pans can be moved to a cooler zone without losing temperature.
Operation is straightforward: place the pan on the chosen plate, turn the switch to the desired setting, and wait for the iron to reach temperature. The hob's feet are adjustable for levelling on uneven floors, and a locking system keeps the unit stable once positioned. Each plate has a set of steel guides that centre the pan and prevent it from sliding when the hob is tilted during cleaning or transport.
The construction is entirely stainless steel, grade 18/10 (AISI 304), chosen for resistance to corrosion in wet or salty environments. The control knobs are water-resistant to IPX5, meaning they can withstand low-pressure jets from any direction, such as those from a hose during deep cleaning. Chrome-plated trim pieces protect vulnerable edges and give a clear visual boundary between the worktop and the splash guard.
The 21 kW total power rating requires a 400/440 V three-phase supply, the standard for commercial kitchens with high-demand appliances. This voltage allows the hob to draw current evenly across three live conductors, reducing the load on any single phase and preventing circuit overloads. The 94 kg weight means the unit is moved with a trolley or two people, and the 1200 × 900 mm footprint fits a standard 90 cm worktop depth, leaving room for adjacent sinks or prep areas.
Cleaning is done with a damp cloth and mild detergent; the satin finish hides water marks and fingerprints. The cast-iron plates can be removed for deeper cleaning, and the splash guard lifts off to reach the rear wall. No special maintenance is required beyond checking that the thermal limiters are free of grease and that the feet remain tight.
