An electric hob that transfers heat through solid cast iron plates, giving even, steady conduction to pans. The iron holds heat longer than thin elements, smoothing out power fluctuations and keeping a consistent temperature once the setting is chosen. Each plate is switched on by a selector knob that offers seven power levels, letting the chef move from a gentle simmer to a rolling boil without changing pans or burners.

The operator places a pan on one of the two round cast iron plates, turns the knob to the desired setting, and the hob heats the pan from below. A temperature limiter cuts power if the plate overheats, protecting the unit and the food. When the knob is turned to zero, the plate begins to cool; the hob has no residual heat indicator because the cast iron retains warmth for several minutes, so the chef must allow time before handling the surface.

The hob is built as a single unit of 18/10 CrNi stainless steel with a 1 mm thick worktop that has rounded edges for safety. Chrome-plated components and a splash guard at the rear keep grease and liquids from reaching the controls. The control knobs are IPX5 water-resistant, allowing them to be wiped down without risk of shorting. Underneath, adjustable feet level the unit on uneven floors, and a locking system secures the hob to a worktop or counter if required. Tray runners with locking stops hold pans steady during stirring or lifting.

The 3.5 kW power rating means the hob draws a significant load and must be connected to a 3-phase 400/440 V circuit, the standard supply for professional catering equipment. The 300 mm depth and 600 mm width fit a compact worktop space, while the 280 mm height keeps the cooking surface at a comfortable working level. At 16 kg, the unit is light enough to be moved by one person but stable enough to stay in place during use.

Cleaning is done by wiping the stainless steel surfaces with a damp cloth and mild detergent. The cast iron plates should be cooled completely before cleaning to avoid warping. The splash guard and tray runners can be removed for thorough washing, and the IPX5-rated knobs can be rinsed under a tap if needed. The Scotch-Brite satin finish hides minor scratches and fingerprints, reducing the need for frequent polishing.

The PCT-63ETX is a two-plate model with cast iron hotplates; LOTUS also offers variants with glass ceramic surfaces and residual heat indicators for kitchens that prefer a different cooking style.
