A four-plate electric hob built for commercial kitchens, where each square cast-iron element transfers heat directly into the base of pots and pans. The hob uses electric resistance coils beneath the plates; when current passes through, the coils glow and the cast iron above them heats evenly. Because the heat source is in direct contact with the cooking surface, response is immediate and recovery is fast after a cold pan is placed on it. The square shape of the plates matches the footprint of standard gastronorm containers, allowing the same pan to move from hob to oven or bain-marie without transfer.
To operate, the chef places a pan on one of the four square plates and turns the corresponding seven-position power regulator. Each step on the dial increases the current to the coil, raising the temperature of the plate in controlled increments. The front edge of the hob carries a chromed guard rail that prevents pans from sliding off, and removable trivets lock into place to hold larger vessels steady. Once the required setting is reached, the hob maintains that level until the dial is turned down or off. The rear splash panel and water-resistant control knobs protect the internal wiring from steam and splashes, while the satin-finish stainless-steel worktop resists scratches and corrosion.
The hob is constructed from 2 mm 18/10 AISI 304 stainless steel, with rounded edges and a Scotch-Brite satin finish. Cast-iron plates are bordered by steel rims to contain spills, and the entire unit stands on adjustable feet for levelling on uneven floors. The front control panel lifts off to expose the internal components for cleaning or maintenance, and the 71 kg weight ensures stability during heavy use.
A 16 kW total power rating requires a 400 V three-phase supply, the standard circuit in professional kitchens. The 800 mm width fits a standard worktop cut-out, while the 900 mm depth leaves room for rear splash protection and cable routing. IPX5-rated controls allow the hob to be wiped down with a damp cloth without risk of electrical damage, and the seven-position regulators give precise control over simmering, boiling and frying temperatures.
Cleaning involves removing the front panel to access the internal wiring and components, wiping down the stainless-steel surfaces with a non-abrasive cloth, and lifting out the trivets for separate washing. The cast-iron plates should be scraped clean after each service and seasoned periodically to prevent rust. No additional versions or variants of this model are listed.
