Professional electric range with square cast iron hotplates, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction and 7-position power control ensure precise cooking and safe operation.
An electric hob heats a solid plate with embedded elements, transferring heat directly to the base of pots and pans. The method gives even, controllable heat without open flames, making it steady for long simmering or rapid boiling. Cast-iron plates store heat and release it gradually, smoothing out power fluctuations and keeping a consistent temperature once set. The hob's surface stays hot longer than a ceramic one, so it continues cooking briefly after the power is turned off, useful for finishing dishes without extra energy.
To use the hob, place a pot or pan on one of the square plates. Turn the seven-position power regulator to the desired setting; each step corresponds to a fixed heat level, from low simmer to full boil. The hob draws power immediately, so the plate begins heating at once. Adjust the regulator as needed while cooking, watching for the indicator light to confirm power is on. When finished, turn the regulator to zero and remove the pot. The plate will cool slowly, so avoid touching it until it is safe.
The hob is built from 18/10 AISI 304 stainless steel, satin-finished with a Scotch-Brite pattern. The worktop is 2 mm thick with rounded edges, and the rear panel acts as a splash guard. Chrome details and water-resistant IPX5 control knobs protect against splashes and steam. Each 900 mm square plate is cast iron with a 4 kW element, surrounded by a steel rim to contain spills. The front control panel lifts off for access to internal parts, and adjustable feet allow levelling on uneven floors. Pot restraints are included to prevent pans sliding off during use.
The 8 kW power rating means the hob requires a 400 V three-phase circuit, common in professional kitchens but not in domestic settings. The 400x900x280 mm footprint fits a standard worktop cut-out, and the 33 kg weight allows two people to move it without machinery. The voltage options cover 400 V two-phase, 230 V three-phase and 230 V single-phase supplies, so the hob adapts to different kitchen electrical layouts.
Cleaning involves wiping the stainless steel surfaces with a damp cloth and mild detergent. The control panel lifts off for access to internal parts, and the cast-iron plates can be scrubbed with a non-abrasive pad once cool. The pot restraints and steel rims are removable for thorough cleaning. Regular checks of the adjustable feet ensure the hob remains stable during use.
The PCQT-94ET is a two-plate electric hob with square cast-iron surfaces, designed for professional kitchens where direct, controllable heat is needed. It is listed under electric hobs in the LOTUS catalogue.
