BRF-64ETX is a professional electric multifunctional bratt pan with a 12-litre tank, designed for frying, braising, boiling, and preparing a wide range of dishes in professional kitchens.
GN 2/3, depth 150 mm.
A fixed braising pan heats a shallow, conductive stainless steel tank from below, transferring energy directly into the food or liquid. The even base spreads heat across the entire surface, eliminating hot spots and allowing consistent searing, simmering or shallow frying without stirring. A thermostat cycles the element to hold the chosen temperature, so the operator can leave the pan unattended while stocks reduce, sauces thicken or meats brown without scorching.
The 12 litre tank is loaded through the open top; the operator sets the temperature with a waterproof knob and starts the element. A removable liquid collector beneath the front edge catches any overflow or condensation, keeping the worktop dry. Once the food reaches the desired doneness, it is lifted out with a perforated spoon or ladle, leaving the pan ready for the next batch.
The unit is fabricated from 18/10 CrNi AISI 304 stainless steel, satin-polished to resist fingerprints and corrosion. The 1 mm thick worktop and rounded edges prevent sharp corners that could trap debris or damage packaging. Chromed details protect high-wear areas, and a rear splashback stops liquids from reaching the wall. The front control panel lifts away to expose all serviceable parts, simplifying maintenance.
A 3.3 kW heating element draws power from a 400 V three-phase supply, the standard circuit in professional kitchens. The 75 kg weight requires two people to move the unit, but the adjustable flanged feet level it on uneven floors without shimming. The footprint of 400 by 600 mm fits between standard worktop runs, leaving 900 mm clearance above for extraction hoods.
Cleaning involves wiping the satin finish with a damp cloth and mild detergent, then rinsing. The liquid collector is removed, emptied and washed separately. The front panel is unclipped monthly to inspect the element and thermostat connections, ensuring the appliance remains safe and responsive.
