A fixed electric braising pan heats a shallow stainless-steel bowl from below, circulating warmth evenly through a thick multi-layer base. This steady, low-gradient heat prevents hot spots and reduces the risk of food burning while allowing gentle simmering, searing or shallow frying across the entire surface.

The operator lowers ingredients into the stainless-steel bowl, selects the desired programme on the 4.3-inch colour touch screen, and starts the cycle. Two programmable timers count down independently, while PID temperature control holds the setting up to 300 °C. An optional temperature probe can be fitted for core readings. Once cooking is complete, the pan drains liquids into a removable collection tray beneath, simplifying cleanup and daily maintenance.

The entire structure is fabricated from 18/10 AISI 304 stainless steel, finished in a Scotch-Brite satin polish. The 2 mm-thick worktop has rounded edges for safety, and the rear protective panel shields the controls from splashes. IPX5-rated waterproof control knobs ensure safe operation in wet environments. A safety thermostat cuts power if the temperature exceeds safe limits.

The 8 kW heating element draws a 400 V three-phase supply, typical of heavy-duty catering equipment. At 126 kg and measuring 800 × 705 × 900 mm, the unit requires a dedicated floor space and must be positioned on adjustable legs for stability. The legs can be levelled to compensate for uneven floors, ensuring the pan remains steady during use.

Cleaning is straightforward: the front control panel detaches to expose all main components, and the removable liquid-collection tray can be emptied and washed separately. The Energy Saving function reduces power consumption during idle periods, while WiFi and cloud connectivity allow remote monitoring, diagnostics and management of the appliance from a central kitchen system.
