A pasta cooking machine heats water in a stainless steel tank and circulates it around perforated baskets of pasta, raising the temperature evenly to the boil. The water transfers heat directly to the strands or shapes, cooking them through without scorching. High-wattage tubular elements sit beneath the water line, delivering rapid recovery so the next batch starts at the correct temperature. A level sensor maintains the water volume, preventing dry firing and ensuring consistent results across service periods.
The operator connects the machine to a three-phase 400 V supply, fills the tank via the built-in tap, and sets the four-position switch to the desired heat level. Once the water reaches cooking temperature, the perforated baskets are lowered into the tank. Safety handles keep hands clear of the hot water, while an overfill valve prevents spillage. After the programmed cooking time, the baskets are lifted out and the pasta is drained, ready for plating or further preparation. A floor drain allows quick emptying of the tank when the service is complete.
The tank is fabricated in AISI 316 stainless steel, while the outer body and 2 mm worktop use AISI 304 with a Scotch-Brite satin polish. Chromed details add corrosion resistance to moving parts. Rotating coils beneath the heating elements simplify tank cleaning, and a safety thermostat cuts power if the water overheats.
The 7.8 kW power rating indicates the load on the kitchen's three-phase circuit; this machine will require a dedicated line capable of handling the current. The 25 litre capacity allows simultaneous cooking of multiple pasta portions, while the 22 kg shipping weight ensures stability on the worktop without needing additional fixing, though a fixing system is provided for permanent installation.
