CPT-76ETX is a professional electric pasta cooker with a 25-litre tank, designed for the fast and efficient preparation of pasta, vegetables, and other products in professional kitchens.
A commercial pasta cooking machine heats a large volume of water to a controlled temperature, circulating it around perforated baskets of fresh or dried pasta so that strands cook evenly without sticking or breaking. The water is kept at a steady boil by high-output elements, while a thermostat cycles the power to maintain the set point. This method transfers heat quickly and uniformly, reducing cooking time and preserving texture compared with open-pot boiling on a hob.
To operate the LOTUS CPT-76ET, fill the 25 litre tank with fresh water to the marked level. Set the four-position control switch to the desired temperature band; the machine will heat the water and hold it ready. Load the perforated basket with pasta, lower it into the tank, and start the timer. Once cooking is complete, lift the basket, drain the pasta over the tank, then empty the tank through the front drainage tap for cleaning.
The unit is built from two grades of stainless steel: the outer body and worktop are 1 mm thick AISI 304 with a Scotch-Brite finish, rounded edges and chrome-plated trim, while the inner tank is made of corrosion-resistant AISI 316 for extended service in wet environments. IPX5-rated waterproof control handles protect the electrical components during washdown. Adjustable legs and a locking mechanism secure the machine on uneven floors.
Controls consist of a four-position rotary switch that selects the heating level, a safety thermostat that cuts power if the water overheats, and a water-level sensor that prevents dry firing. A front-mounted drainage tap allows quick emptying of the tank without tilting the unit.
A 6.25 kW power rating requires a 400 V three-phase circuit with neutral and earth, typical of professional kitchen distribution boards. The 25 litre capacity allows a single batch of up to 45 kg of pasta to be cooked at once, reducing the number of cycles needed during service. The footprint of 600 × 705 mm fits on a standard worktop or mobile stand, while the 280 mm height keeps the loading point within easy reach of the operator.
Cleaning is simplified by the front-access control panel, which lifts away to expose all internal surfaces. The drainage tap empties the tank in minutes, and the smooth stainless steel finishes resist staining and scale build-up. Perforated baskets are available in different configurations to suit various pasta shapes and sizes.
