A dual-vat electric pasta cooking machine heats water in two separate stainless steel vats, each fitted with tubular heating elements beneath the water line. The elements raise the temperature quickly and hold it steady, so that pasta, dumplings or vegetables cook evenly without sticking or breaking. The water circulates naturally as it heats, eliminating cold spots and ensuring every piece cooks at the same rate. A safety thermostat cuts power if the water overheats, protecting both the machine and the food.
To operate, the chef fills each vat with water through the built-in supply tap, then sets the four-position power regulator to the desired heat level. Once the water reaches cooking temperature, perforated baskets of food are lowered into the vats. The operator watches the cooking time and lifts the baskets when done, letting excess water drain back into the vat. An overflow protection system and floor drain connection prevent spills and simplify water removal after service.
The machine is built from 18/10 AISI 304 stainless steel, with a 2 mm thick worktop and rounded edges for safety and hygiene. The vats themselves are made from AISI 316 stainless steel, which resists corrosion and extends service life in busy kitchens. Chrome-plated details and a satin-finish Scotch-Brite surface reduce glare and fingerprints. IPX5-rated waterproof control handles allow safe cleaning with a hose. The rear protective panel and rounded vat corners make wiping down surfaces quick and thorough. The front control panel lifts off for access to internal parts, and adjustable legs ensure a stable, level setup on uneven floors.
The 27 kW power rating means the machine requires a dedicated 400 V three-phase circuit, the standard supply for large commercial equipment. The 40+40 L capacity allows two different batches to cook simultaneously, doubling throughput during peak service. The 800 × 900 × 900 mm footprint fits against a wall or between other worktop units, while the 98 kg weight keeps the machine stable without permanent fixing. The voltage of 400 V 3N 50/60 Hz matches the mains supply in most professional kitchens, avoiding the need for a transformer.
Cleaning involves draining the vats through the floor drain connection, wiping down the worktop and control handles with a damp cloth, and removing the front panel to reach internal components. The rounded corners and smooth surfaces prevent food debris from collecting, and the waterproof controls allow rinsing without risk of damage. Perforated baskets, if used, are washed separately.
The CP-98ET is supplied with one end closure element (TPA-9) for sealing the vat when not in use. Perforated baskets for different pasta shapes or vegetables are available separately, allowing the machine to handle multiple menu items without cross-contamination.
