A dual-vat electric pasta cooking machine heats water in two separate chambers, each controlled independently. Electric heating elements beneath the vats raise the water to the required temperature, while a thermostat maintains consistency. The machine is designed for continuous cooking, allowing operators to load fresh pasta or other ingredients into one vat while the other remains in use. This method ensures even cooking and prevents overloading, as the water circulates around the perforated baskets that hold the product.
To operate, the machine is first connected to a water supply and drainage system. The automatic water loading system fills each vat to the correct level, monitored by an integrated sensor. Once filled, the heating elements are activated, bringing the water to the desired temperature. The operator selects the power setting using the four-position regulator, adjusting the intensity of the heat for different types of pasta or cooking requirements. Perforated baskets, available in various sizes, are lowered into the vats to cook the product. After cooking, the baskets are lifted out, and the water drains through the overflow protection system, which also prevents spillage.
The construction is entirely stainless steel, with the main structure made from 18/10 AISI 304 grade and the vats from AISI 316, providing corrosion resistance and durability. The worktop is 2 mm thick with rounded edges, and the control handles are water-resistant to IPX5 standards. A rear protective panel and chrome-plated details enhance both safety and hygiene. Adjustable legs ensure stable positioning on uneven floors, while the front control panel can be removed for easy access to internal components during cleaning.
The 27 kW power rating requires a 400 V three-phase electrical supply, suitable for commercial kitchens with high-capacity circuits. The 40+40 L capacity allows for large batches of pasta to be cooked simultaneously, reducing preparation time in busy service periods. The 800x900x900 mm footprint fits into standard worktop layouts, while the 98 kg weight ensures stability during operation. The water level sensor and overflow protection system reduce the need for constant monitoring, allowing staff to focus on other tasks.
Cleaning is straightforward: the front panel detaches to expose the vats and heating elements, and the drainage system connects to a floor waste outlet for quick water removal. The stainless steel surfaces can be wiped down with standard kitchen cleaning agents, while the chrome-plated parts resist tarnishing. The machine includes one end closure element (TPA-9) for secure installation in a run of equipment.
This model is designed exclusively for professional catering environments, with features such as high power output, corrosion-resistant materials, and automated water management that are unnecessary in domestic settings.
