An electric pasta cooking machine heats two separate vats of water to a rolling boil, each controlled independently so that different pasta shapes or batches can be cooked at once. Tubular heating elements beneath the vats transfer heat directly into the water, raising the temperature quickly and holding it steady. The water circulates naturally as it heats, ensuring even cooking without stirring. A level sensor monitors the water in each vat, triggering an automatic fill valve to top up the volume as it evaporates or is displaced by the pasta, so the operator does not need to watch or refill manually.
To start, the operator selects the desired power setting on the four-position regulator for each vat, then loads the perforated basket with raw pasta. The basket is lowered into the boiling water; the machine maintains the set temperature throughout the cooking cycle. Once the pasta is al dente, the basket is lifted out and the contents drained. The second vat can be used simultaneously for another batch or a different product, doubling throughput without mixing flavours or starches.
The construction is 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish, giving a smooth, durable worktop that resists scratches and corrosion. The cooking vats are made from AISI 316 stainless steel for extra protection against salt and acid. Rounded edges and a rear protective panel prevent injury and simplify cleaning. Chromed details and an IPX5-rated waterproof control handle allow safe operation in wet environments. An overflow protection system and floor drain connection ensure any excess water is safely channelled away.
Controls include a four-position power regulator for each vat, allowing precise adjustment of the cooking intensity. A safety thermostat cuts power if the temperature exceeds the safe range, protecting the machine and the food. The automatic water loading system, with an integrated supply tap and level sensor, keeps the vats filled to the correct level without manual intervention.
The 27 kW power rating requires a three-phase 400/440 V supply, typical of professional catering kitchens. The 800 × 900 × 900 mm footprint fits into a standard worktop run, while the 98 kg weight ensures stability during operation. Adjustable legs allow the unit to be levelled on uneven floors, preventing spills or uneven cooking.
Cleaning is straightforward: the front control panel can be removed for access to the main components, and the smooth stainless steel surfaces wipe clean easily. The vats and heating elements are designed for quick drainage and drying, reducing downtime between services.
The machine is supplied with a single end-stop element (TPA-9) for securing the baskets during operation. Perforated baskets for different pasta shapes are available separately, allowing the unit to be adapted for various products.
