Professional electric fry-top with a ribbed cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heat distribution, a long service life, and easy daily maintenance.
A ribbed electric fry-top concentrates heat along the raised ridges, searing food quickly while allowing fat and juices to drain into the valleys. The ridges also create distinct grill marks, giving dishes a charred appearance without an open flame. The flat sections between the ribs provide even contact for delicate items that need steady heat, so the same surface handles everything from steaks to pancakes.
The operator sets the desired temperature between 50 °C and 300 °C using the water-resistant control knobs. A working thermostat maintains the setting, while a separate safety thermostat cuts power if the temperature exceeds the limit. Once the plate reaches the target, food is placed directly on the ribbed surface. The thick 2 mm stainless steel plate distributes heat evenly and retains it, reducing hot spots and speeding recovery between batches. A large-capacity, removable grease tray slides out beneath the plate, collecting drippings for easy disposal.
The unit stands on adjustable legs for stable placement on uneven floors. The open cabinet below provides storage for kitchen tools and accessories, keeping them within reach during service. Controls are mounted on the front panel, which lifts away for access to internal components during cleaning.
The cooking plate measures 36 cm by 68 cm, giving a broad working area in a 90 cm-wide footprint. The 7.5 kW power rating requires a 400 V three-phase electrical supply, typical for professional kitchen circuits. The 79 kg weight ensures stability but means the unit is moved with a trolley or two people. The stainless steel construction includes a satin-finish work surface, rounded edges, and chrome-plated details for durability and ease of cleaning. The rear guard panel protects the wall from splashes.
Cleaning involves removing the front control panel to reach the internal parts. The grease tray is taken out and emptied, and the ribbed surface is scrubbed with a non-abrasive pad to preserve the satin finish. The water-resistant control knobs allow the front to be wiped down without risk to the electronics.
The FTR-94ETX is supplied with one end closure panel (TPA-9) to finish the installation. It is categorised as a 90 cm ribbed fry-top in the LOTUS professional range.
