Professional electric fry-top with a ribbed cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heat distribution, a long service life, and easy daily maintenance.
A ribbed fry-top transfers heat from electric elements through a grooved stainless-steel plate, concentrating the heat along the ridges to sear food quickly while allowing fat and juices to drain into the valleys. This design speeds cooking and reduces flare-ups, making it a standard choice for grilling meats, fish and vegetables in professional kitchens.
The operator lowers the thermostat to the desired temperature between 50 °C and 300 °C, then places food directly onto the ribbed surface. Two independent cooking areas let different items be prepared at once, each controlled by its own thermostat. A safety thermostat cuts power if the working thermostat fails, preventing overheating. The thick plate retains heat evenly and recovers temperature rapidly after cold food is added, so service remains consistent during peak demand.
To use the unit, the chef first ensures the open cabinet beneath is clear, then powers on the fry-top and sets the temperature for each zone. Once the plate reaches the set point, food is placed on the ribs, turned as needed, and removed when done. The large pull-out grease tray collects drippings for easy disposal, while the rear splash guard and chrome-plated details protect the surrounding worktop and walls.
The fry-top is built from 2 mm 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish, rounded edges and a removable front control panel for access to internal components. Water-resistant IPX5-rated control knobs adjust the temperature, and adjustable locking legs provide stability on uneven floors. An open cabinet below offers storage for kitchen tools and accessories, keeping them within reach during service.
A 15 kW power rating indicates the load on the electrical supply; this unit requires a 400/440 V three-phase circuit with 50/60 Hz frequency, typical for heavy-duty catering equipment. The 800 × 900 × 900 mm footprint defines the space it occupies on the worktop or floor, while the 126 kg weight requires two people or a trolley for safe movement. The 76 × 68 cm cooking plate provides ample surface area for high-volume cooking, and the dual-zone configuration allows separate temperature control for different menu items.
Cleaning involves removing the front control panel to access internal parts, emptying the grease tray, and wiping the ribbed surface with a scraper and damp cloth. The satin finish resists scratches and stains, and the rounded edges prevent food debris from collecting. A supplied end panel (TPA-9) can be fitted to close one side of the unit when installed against a wall or another appliance.
The FTR-98ETX is a 90 cm electric ribbed fry-top designed for professional catering environments, combining rapid heat transfer, durable construction and practical storage in a single unit.
