A ribbed fry-top spreads heat across a solid metal plate scored with shallow grooves. The grooves collect juices and fat, keeping them separate from the food so it sears rather than steams. The plate itself is heated by electric elements beneath, which transfer energy evenly across the surface. This method gives consistent browning and a crisp finish without the flare-ups of an open flame, making it suited to high-volume cooking where timing and texture matter.
The operator lowers the food onto the hot ribbed plate, where it contacts the metal directly. The grooves channel liquids away, concentrating heat on the food's surface. A thermostat cycles the elements to hold the set temperature, while a fan beneath the plate circulates air to prevent hot spots. Once the food is cooked, it is lifted clear and the plate can be scraped clean or wiped down between batches.
The unit is built from 18/10 AISI 304 stainless steel throughout, including a 2 mm thick worktop with rounded edges and a satin Scotch-Brite finish. Chrome trim and a high rear splash guard protect the surrounding area. A removable drip tray beneath the front edge catches liquids for easy disposal. An open stainless steel shelf at the rear holds utensils or ingredients within reach.
A 4.3-inch touch screen on the front panel controls the fry-top. It sets the temperature up to 300 °C via PID regulation, which adjusts power in small increments to avoid overshooting. Two programmable timers let the operator run sequences unattended. An Energy Saving mode reduces power draw when the plate is idle. WiFi and cloud connectivity allow remote monitoring, diagnostics and control from a tablet or computer.
The 5.55 kW power rating requires a three-phase 400 V supply, standard in professional kitchens. The 230 V single-phase option suits smaller installations. The 400 mm depth, 705 mm width and 900 mm height fit a standard worktop footprint, while the 64 kg weight ensures stability without anchoring. Adjustable legs level the unit on uneven floors.
Cleaning is simplified by the removable front control panel, which gives access to the interior. The drip tray lifts out for emptying and washing. The ribbed plate can be scraped and wiped between services, and the stainless steel surfaces resist staining and corrosion.
