| NOTES | Hard chrome coating on a steel plate. Ribbed griddle |
Professional electric griddle with a ribbed cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heating, long service life and easy daily cleaning.
An electric ribbed griddle heats a solid metal plate from beneath, transferring heat evenly across the cooking surface. The ribs create channels that guide rendered fat and juices away from food, reducing flare-ups and allowing direct contact with the hot metal for consistent searing and grilling. This method gives rapid, uniform browning and a distinct char pattern without the need for open flames or separate grilling elements.
The operator lowers food onto the preheated plate, where the ribs hold it slightly above the surface so that fat drains into the channels. A double thermostat maintains the set temperature across the entire plate, allowing different items to cook at once without hot or cold spots. Once cooking is complete, the food is lifted off and the grease collection containers beneath the plate are removed for emptying.
Built from CrNi 18/10 AISI 304 stainless steel, the unit has a 2 mm thick worktop with rounded edges and a rear splashback to contain spills. The cooking plate is hard chrome-coated steel, chosen for its rapid heat response and resistance to sticking. Chrome-plated components and a Scotch-Brite satin finish reduce fingerprints and corrosion. The open base includes a storage shelf below the griddle, keeping utensils and ingredients within reach without cluttering the worktop.
Control knobs are IPX5 water-resistant, allowing safe wipe-downs during service. A front panel removes easily to expose all serviceable parts, simplifying maintenance. Adjustable feet level the unit on uneven floors, and the absence of doors keeps the cabinet open for ventilation and quick access.
The 5.55 kW power rating draws a substantial load, requiring a dedicated circuit in a professional kitchen. A voltage of 230 V single-phase or 400 V three-phase with neutral accommodates standard European electrical supplies. The 64 kg weight indicates a sturdy, fixed installation rather than a portable unit, while the 400x705x900 mm footprint defines the space it occupies on the worktop and floor.
Cleaning involves removing the grease collection containers, wiping the chrome plate with a soft cloth to avoid scratching the coating, and washing the stainless steel surfaces with mild detergent. The removable front panel allows access to internal components for periodic inspection and servicing.
The FTR-74ET is categorised under professional electric griddles with neutral cabinets.
