Professional stainless steel electric grill
A smooth fry top grill transfers heat directly from a flat stainless steel plate to food, eliminating hot spots and allowing precise temperature control across the entire cooking surface. The even heat distribution ensures consistent results, whether searing meat, grilling vegetables or holding ingredients at serving temperature. The absence of grates or ridges makes the surface easier to clean and better suited to delicate items that might stick or fall through traditional grill bars.
To operate the LOTUS CWT-94ET, the chef first ensures the unit is levelled on its adjustable legs and connected to a three-phase 400 V supply. The integrated water tray beneath the cooking surface is filled to the recommended level; this water evaporates during cooking, creating a humid environment that helps retain moisture in food and reduces smoke. The power is switched on, and the thermostat is set to the desired temperature. Once the plate reaches the set point, ingredients are placed directly onto the smooth surface. The lift-up stainless steel shelf at the rear provides temporary storage for cooked items or tools. After cooking, the surface is scraped clean while still warm, and the water tray is emptied and rinsed to prevent residue build-up.
The grill is constructed from 18/10 AISI 304 stainless steel, chosen for its corrosion resistance and durability in high-moisture environments. The 1 mm thick cooking plate has rounded edges for safety and is finished with a Scotch-Brite satin polish that reduces sticking. Chrome-plated components and a rear protective panel add to the unit's longevity. IPX5-rated water-resistant control knobs allow safe wipe-downs without risk of electrical damage.
Controls consist of a main power switch and a thermostat dial that adjusts the temperature of the cooking plate. The three-phase 400 V, 7.8 kW power rating indicates the grill requires a dedicated high-capacity circuit typical of professional kitchens. The 57 kg weight means the unit is moved with a trolley or two people, while the 400x900x280 mm footprint fits standard worktop depths and allows side-by-side installation with other equipment.
Cleaning involves daily scraping of the cooking surface, emptying and rinsing the water tray, and wiping down the control panel and exterior with a damp cloth. The front control panel can be removed for access to internal components, simplifying deep cleaning and maintenance.
The LOTUS CWT-94ET is categorised under professional electric grills and smooth fry tops in the commercial catering equipment catalogue.
