Professional electric griddle with a ribbed cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heating, long service life and easy daily cleaning.
A ribbed electric griddle transfers heat from an embedded element through a thick steel plate into the food, concentrating the energy along raised ridges. The ridges sear the food while the valleys collect juices, creating a caramelised crust without constant turning. This method keeps the food above the rendered fat, reducing flare-ups and allowing even cooking across the entire surface.
The operator preheats the plate to the desired temperature, then loads food directly onto the ribbed surface. A grease channel at the front collects excess fat, which drains into a removable container. The double thermostat maintains the set temperature, compensating for cold food or frequent loading. When cooking is complete, the operator slides the food off the plate and empties the grease container before the next batch.
The griddle is built from CrNi 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish. The 2 mm thick worktop has rounded edges, chrome-plated components and a rear splashback. IPX5-rated water-resistant control knobs are fitted, and the open base includes a storage shelf. The cooking plate is either FE430B steel or FE510C chrome-plated steel. All serviceable components are accessible by removing the front control panel, and adjustable feet allow levelling on uneven floors.
The 14.8 kW power rating requires a 400 V 3-phase supply, typical for heavy-duty commercial equipment. The 1200 mm width provides ample cooking space for multiple items simultaneously, while the 150 kg weight ensures stability but requires a fixed position or a trolley for relocation. The 50–300 °C temperature range covers searing, grilling and holding tasks.
Cleaning involves scraping the ribbed plate after each service, removing and emptying the grease containers, and wiping down the stainless steel surfaces. The front control panel can be removed for access to internal components, and the chrome-plated parts should be polished to prevent tarnishing.
The FTR-712ET is supplied without doors for the neutral cabinet, allowing open access to the storage shelf beneath the griddle.
