Professional gas bratt pan with a manual tilting mechanism, designed for frying, braising, and cooking meat, fish, vegetables, sauces, stews, and other dishes in professional kitchens. The model is equipped with thermostatic temperature control up to 300 °C, piezoelectric ignition, a pilot burner, and a manual tilting system for easy emptying.
A bratt pan combines the functions of a deep fryer, braising pan, griddle and stockpot in a single heavy-duty vessel. Gas burners beneath the bowl heat the thick stainless-steel base by direct conduction; the curved sides and rounded corners spread the heat evenly across the entire cooking surface. A manual tilt mechanism allows the operator to pour liquids or transfer solids without lifting the pan, reducing strain and spillage in a busy kitchen.
The sequence begins by filling the 120 L bowl through the built-in water tap. Once the gas supply is opened, the piezo ignition lights the main burner and the pilot flame keeps it alight. The thermostat control sets the temperature up to 300 °C, monitored by a thermocouple that closes the safety valve if the flame fails. When cooking is complete, the self-locking worm-gear tilt mechanism is released; the pan tilts smoothly forward, emptying its contents into a waiting container without tipping the unit off its adjustable legs.
Construction is 2 mm thick 18/10 AISI 304 stainless steel throughout: the bowl, lid, rear splash guard and satin-finish Scotch-Brite surfaces. Rounded edges and a rear panel protect staff from sharp corners and hot splashes. IPX5-rated waterproof control handles allow safe hose-down cleaning. A flue-gas extraction system vents combustion products outside the kitchen, while a conversion kit supplied in the box adapts the burners to different gas types.
The 30 kW gas input draws a steady load from the kitchen's gas line, while the 0.1 kW electrical supply powers the ignition and safety circuits. A 230 V single-phase connection is standard for UK commercial kitchens. The 208 kg weight requires a sturdy worktop or floor mounting; the 1200 × 900 mm footprint fits within a standard catering workstation. The 120 L volume handles large batches of stews, sauces or braised meats in a single load.
Cleaning follows the materials: the stainless-steel bowl and lid are scrubbed with non-abrasive pads, rinsed and dried. The tilt mechanism is wiped down and checked for smooth operation. The gas burners and flue are inspected weekly for blockages, and the water tap is flushed to prevent lime build-up.
