A gas-fired fryer designed for confectionery work heats a deep, wide vat of oil to the steady temperature needed for doughnuts, churros, fritters and other sweets. The burners sit beneath the tank, transferring heat through the base and sides so the oil circulates naturally without a pump. A thermostat holds the set point, while a thermocouple safety valve shuts off the gas if the flame fails or the oil overheats.
The operator fills the 20 litre tank with fresh oil, fits the basket and lowers the lid to reduce heat loss. Piezoelectric ignition lights the pilot and main burners; the pilot flame remains lit to relight the burners automatically if they blow out. Once the oil reaches the set temperature, the basket is loaded with dough pieces and lowered into the oil. The wide, shallow shape of the tank lets the sweets float freely without crowding, so they cook evenly and develop the expected colour and texture. After frying, the basket is lifted clear, the lid closed, and the oil filtered through the built-in mesh to remove crumbs before the next batch.
The fryer is built from 1 mm thick CrNi 18/10 AISI 304 stainless steel with a Scotch-Brite satin finish, rounded edges and chromed details. A rear splashback protects the wall, and the worktop is integrated into the construction. The front control panel lifts away for access to all serviceable parts, and adjustable feet level the unit on uneven floors.
Controls include a thermostat to set the oil temperature, a pilot light to confirm the flame is lit, and thermocouple safety valves that cut the gas supply if the flame fails. The appliance is supplied with conversion jets for both LPG and natural gas, allowing it to run on either fuel type without additional parts.
The 11.2 kW power rating indicates the gas load the fryer places on the supply line, which must be sized accordingly. The 20 litre volume sets the maximum batch size for sweets, while the 600 mm width, 700 mm depth and 850 mm height determine the space it occupies on the worktop. At 68 kg, the fryer is moved with a trolley or two people, and the adjustable feet allow it to be levelled once in place.
Cleaning involves draining the oil through the filter drain pan, removing the basket and lid for washing, and wiping down the stainless steel surfaces with a non-abrasive cloth. The tank filter basket catches crumbs and is cleaned after each session to prevent oil degradation.
The fryer is supplied with both LPG and natural gas conversion jets, so no additional parts are needed to switch between fuel types. An oil filter drain pan is included for safe oil removal and filtration.
