Professional gas griddle with a 1/2 ribbed and 1/2 smooth cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heat distribution, a long service life, and easy daily maintenance.
A gas fry-top spreads heat across a solid metal plate, transferring energy directly to pots, pans and griddles without the air gap of a hob. The ribbed surface channels fat and juices away from food, keeping it above the liquid so it crisps rather than steams. Two independent cooking areas let the operator run different temperatures at once, so one side can hold a sauce at a low simmer while the other sears meat at high heat.
The sequence begins with the pilot light: a piezo ignition sparks the flame without matches or external lighters. Once lit, the thermostatic gas valve adjusts the flow to hold the set temperature between 50 °C and 300 °C. A thermocouple monitors the flame and cuts the supply if it fails, preventing unburnt gas from escaping. Exhaust gases are drawn through a rear flue, keeping the kitchen atmosphere clear. Below the plate, a large-capacity removable grease tray collects fat and residues; the tray slides out for emptying and cleaning without tools.
The construction is 2 mm thick 18/10 AISI 304 stainless steel, satin-finished with Scotch-Brite for a non-reflective work surface. Edges are rounded for safety and ease of wiping; chrome-plated details and a rear protective panel resist corrosion and knocks. Controls are water-resistant to IPX5, allowing hosing down without electrical risk. A front control panel lifts off for access to gas valves and ignition components. The unit ships with conversion nozzles for different gas types and a single end panel (TPA-9) to close the run if the fry-top is installed at the end of a bank.
The 21 kW power rating indicates the load on the gas supply; a commercial kitchen must ensure the meter and pipework can deliver that flow continuously. The 1200 × 705 × 900 mm footprint reserves space for ventilation around the rear flue and for the open storage cabinet below. At 154 kg, the unit requires two people or a trolley for safe movement; adjustable legs level it on uneven floors and lock it in place.
Cleaning follows from the materials and construction: the stainless steel plate is wiped with a cloth or scraper after each service, while the grease tray is emptied and washed daily. The control panel and gas components are reached by removing the front fascia, allowing thorough weekly maintenance. The open cabinet below is wiped down as needed, with no hidden corners to trap debris.
The FTLR-712G is a single model; the only variant is the gas type, which is converted on site using the supplied nozzles. The open cabinet is neutral, accepting any kitchen utensil or container that fits the 1200 mm width.
