Professional gas griddle with a smooth cooking surface and an open neutral cabinet, designed for intensive use in professional kitchens. The durable AISI 304 stainless steel construction ensures even heat distribution, a long service life, and easy daily maintenance.
A gas fry-top heats a solid steel plate directly with burners beneath, transferring heat evenly across the surface for searing, grilling and shallow frying. The smooth plate gives a continuous cooking area without ridges, allowing food to slide easily and spread across the full width. Heat rises from the burners, warming the plate from below, while the steel's mass holds and distributes the temperature steadily. A thermostat linked to a gas valve adjusts the flame to maintain the set level, keeping the plate at the chosen heat without hot or cold spots.
The operator lights the pilot with a piezo igniter, then sets the temperature between 50 °C and 300 °C using the water-resistant control knob. Once the plate reaches the selected heat, food is placed directly on the surface, cooked, and removed with a spatula. Excess fat and juices run off the smooth edges into a large-capacity, removable drip tray beneath the plate, reducing flare-ups and simplifying cleaning. The open cabinet below provides storage for utensils, pans or ingredients during service.
The fry-top is built from 2 mm thick 18/10 AISI 304 stainless steel, with a satin finish achieved by Scotch-Brite brushing. The cooking plate itself is made of FE510C steel, chosen for its heat retention and durability. Edges are rounded for safety, and chrome-plated details and a rear protective panel give a professional appearance. The control knob carries an IPX5 water-resistance rating, allowing it to be wiped down without risk of damage. A thermocouple monitors the plate temperature, feeding back to the thermostatic gas valve for precise control. Flue gases are vented through a rear exhaust, keeping the kitchen atmosphere clear.
The unit measures 600 mm wide, 705 mm deep and 900 mm high, with a weight of 83 kg. These dimensions set the space it occupies on the worktop and the floor loading it imposes. The 10.5 kW power rating indicates the gas load on the supply, requiring a dedicated connection sized for commercial use. The adjustable legs allow the unit to be levelled on uneven floors, ensuring stability during cooking.
Cleaning involves removing the front control panel for access to internal parts, emptying and washing the drip tray, and wiping the smooth plate with a scraper and cloth. The satin finish resists scratches and hides minor marks, while the rounded edges prevent food debris from catching. A conversion kit for different gas types is included, along with a single end panel (TPA-9) for finishing the installation.
